The Bread Basket Bakery was born in 1982 when Joan Tallman began baking out of her home kitchen for friends and family. Over the next four decades, Joan grew the business into a thriving staple in downtown Saratoga Springs.
In 2020, Joan decided to retire her apron. Lisa and Ed Mitzen, the founders of The Business for Good FoundationTM purchased the business and building in 2020, committed to keeping the same delicious recipes that made the Bread Basket so successful for years and years.

Mary Garofalo has been an integral part of the Bread Basket family since 2017. Mary’s mission is to spread joy through her food creations. A classically trained Chef Culinary Institute of America graduate, Mary brings to the table 30 plus years of experience and multiple dishes. Mary’s exuberance and passion for the business comes thru in her daily specials, to your “go-to” lunches and dinners.Mary hugs every single customer that comes through the door with her food.
Angelina comes from western New York, near Buffalo. She is a graduate of Alfred State, graduating with a degree in baking, production, and management. Angelina has been with the Bread Basket bakery for more than four years. She brings over 20 years of cake decorating and baking experience. Angelina originally worked at the Bread Basket in the late 1990s, before moving to a different career. She returned to her passion of baking professionally upon her return to the bakery and has built a huge following for her cakes!
Growing up in the Southern Mississippi gave Christina a deep appreciation for the life of the city and the ways of the country. From a very young age she has always loved baking and cooking. She worked at various bakeries in her youth until relocating to Louisiana in 2007. She started her culinary career as a pastry cook in the historic Emeril’s Delmonico in New Orleans. Self-taught, she worked her through the ranks to become the Executive Pastry Chef in 2018. Christina has worked with such renowned chefs as Emeril Lagasse, Jacques Torres and Duff Goldman.
With 13 years of experience and a background in fine dining, Christina came to the Bread Basket during the summer of 2020 to become the baker.
